Our Chef
Led by Executive Pastry Chef Gianluca Guinzoni, our team thrives under his vision and expertise. Chef Gianluca Guinzoni’s culinary journey began with a passion for fresh ingredients instilled by his family in Piedmont.
After training in Como, he joined the iconic Villa D’Este Hotel, gaining skills that would take him from Sardinia’s Cala di Volpe Hotel to London’s Michelin-starred Zafferano. In Dubai, Gianluca grew his expertise at the Cavalli Club, immersing himself in international flavors, before moving to Shanghai’s Orient Hotel as Pastry Chef under Executive Chef Giovanni De Ambrosis.
In 2016, he led the pastry team at Venice’s Belmond Hotel Cipriani, earning a Michelin star. Roles at Monte Carlo’s Pasticceria Cova and Raffles the Palm in Dubai followed, before he fulfilled his dream of opening G&G Dolci—a place where tradition and excellence are crafted into every treat.
With his leadership, we continue to push the boundaries of pastry, crafting exceptional desserts that not only reflect his passion but also highlight the artistry and precision that define G&G Dolci.
